Oh, yeah, crap. I forgot.

Pour this corned beef broth through a mesh strainer to get most of the crap out for a clearer broth. There's bits floating around.

After it cools, the fat will all float to the top like a butter.

Skim as much of that off as possible if you want to reduce the fat content in your next thing.

CORNED BEEF AND CABBAGE LEFTOVER STOCK

What to do! What a waste to just pour this salty meaty broth down the sink. Save in a tupperware container for your next meal.

It can be used to make rice or quinoa.

Or a nice cabbage soup or potato stew.

I've made Ramen with it.

It can also be turned into a gravy!

Or as liquid for braising a roast.

CORNED BEEF AND CABBAGE

Crock Pot recipe, real easy. Requires layering and no stirring.
Get yourself a 4 lb Brisket.

Load the bottom with tiny stew potatoes (red and gold) probably like 8-12 to just line the bottom. Or cut up 2-3 larger potatoes.

Small bag of baby carrots (multicolor is nicer) or chop like 2-3 larger carrots into coins.

(Optional) Cut up one large yellow or sweet vidalia onion in like stew size chunks, line over carrots flat as possible.

Rinse as much salt and slime off brisket as you can, place on top of veg fat side up. Sprinkle seasoning packet over fat.

De-core and then chop cabbage into like 6-8 chunks and load on top of brisket. If it doesn't all fit, wait a couple hours until it cooks down.

Pour in 4 cups chicken broth.
1 shot of Jameson Whiskey.
Crack some pepper on top.

Cook on low for 8 hours for very tender meat. Or 4 hours on high if you are in a hurry.

Scoop out veg, put in bowl. Carefully move brisket to board to cut.
Save stock aside.

Tangential tip because I both forgot and ran out of text space on grilled cheese...

If you coat your knife with a little olive oil, the melted cheese won't stick to your knife when you cut it, allowing for a less frustrating experience and a prettier looking slice.

TOMATO SOUP?

You gotta dip the grilled cheese.

You basically make a pasta sauce, right? Chopping tomatoes and seasoning it and cooking it down for a couple hours. Then you add some stock and all of a sudden its a soup. That's a lot of work though, we already used all our effort assembling sandwhiches.

For a fast dipper with no effort, I use QTY 2 Cans Progresso Tomato Soup [19oz] and QTY 1 Can Campbell's Cream of Mushroom Soup [10.5oz]. Heat and stir until blended.

OVEN GRILLED CHEESE

-Set oven to 425°F (220°C / Gas Mark 7) we be preheating during assembly
[An 18x13 baking sheet holds 6 sandwiches comfortably, or you can do 2 on a small toaster oven pan]

-Any square bread you like, I use Stroehmann King White Bread because it's cheap. This can apply to pretty much any bread, though.
(2 slices each man, it's a sammy)

-Brush sides of 1st bread layer with olive oil and place oil down

-Add 2 slices of cheese, I like Mozzarella & Provalone. Another house fav is Mozz and Pepperjack.
[Literally any cheese you like]

-You like pesto? Okay, good, me too. Spread that shit on the inside of that second slice and assemble on top of stack.
(Don't like pesto? Alt: sprinkle with Basil and Oregano. Or don't season at all)

-Brush topper with more olive oil.
[Meticulously arrange everything square on pan because OCD]

-Bake 5 minutes. Pull out pan with oven mitt and flip each sammich with a spatula. Return to oven bake additional 4-5 min. Rest a few before cutting

SPICY ASIAN CUCUMBER SALAD
- one cucumber per person, scraped with fork, sliced into bowl
- pinch salt, msg, sugar
(Toss, let sweat 30 min and drain)
- Marinade: spoonful of Lao Gon Ma, squirt of sweet honey Japanese BBQ sauce, squirt of siracha, little bit of sesame oil, soy sauce and rice wine. A little bit of mix can spread far because it's thin, eyeball it. You want thicker and creamier? Add a spoon of mayo.
(Mix in seperate mini bowl for consistency, then add to big bowl and toss, cover in fridge, wait an hour, overnight or eat immediately, I'm not your boss)
-Throw some sesame seeds on it when you plate.
